We’re getting back into iced coffee weather here, so I find myself wanting coffee ice pops more and more:

I used half leftover coffee and half cream to make this pop, along with about a teaspoon of sugar and a small splash of vanilla.

I should have used a higher concentration of coffee here, as the finished pop tasted a little weak. But still, they were a much-needed hit of caffeine for my still sleep-deprived self.
